To me, this is the perfect meal of all time. Rice, beans, and vegetables. Here's the list of ingredients I used: black beans, baby kale, carrots, celery, broccoli, red bell pepper, brown rice, pickled ginger, soy sauce, vinegar, sugar, and olive oil.
Saute carrots and celery in a little bit of olive oil. Add a can of rinsed black beans and some baby kale. After a few more minutes of cooking, remove from the pan.
In the same pan, saute the broccoli, celery and bell pepper to desired doneness. Add a splash of vinegar and soy sauce, a pinch of sugar, and some pickled ginger.
Serve the beans on top of brown rice with the vegetables on the side.
That's the way I made it tonight, but the possible variations are endless. It's also good on top of some noodles, or even thrown into a miso or udon soup.
